Since 1870, da Michele has made arguably the world's most famous pizza: soft cornicione, San Marzano tomato, fior di latte, and nothing else on the menu except marinara. The Forcella room is spare, the queue is long, and the experience is closer to communion than dinner. Order one margherita per person, eat fast while the crust is still soufflé-soft, and accept that every other pizza will be measured against this one.
